Guys,

In our setup we have a database server and application server connected to many clients.

When I restart the computer on which the database server is hosted the database starts automatically. I know this has a simple explanation but can you tell me why this happens

First, Oracle service is in autostart mode, check "Services".
Then in your registry database is also in autostart mode, check HKLM\Software\Oracle key.

Because the service is set to start automatically.
Supply some useful information and you might get a more useful answer.
